Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper, letting the edges hang over for easy removal of the bars.
  2. Mix Dry Ingredients: In a medium bowl, combine rolled oats, granulated sugar, baking powder, salt, and cinnamon. Stir well to ensure even distribution of the leavening and spices.
  3. Mix Wet Ingredients: In a large bowl, whisk together the eggs, almond milk, unsweetened applesauce, and vanilla extract until smooth. Pour the dry ingredient mixture over the wet ingredients and stir until combined. Let the mixture rest for about 20 minutes to allow the oats to absorb moisture and flavors to meld.
  4. Add Nuts and Fruit: Fold in the finely chopped walnuts and dried cranberries evenly into the batter. Spread the mixture evenly into the prepared baking pan, smoothing the top with a spatula.
