Description

This One-Pot Taco Rice Skillet is a flavorful and satisfying dish combining seasoned ground beef, rice, black beans, and vegetables. Cooked entirely in one skillet, it’s an easy weeknight meal with a Tex-Mex twist, topped with melted cheese and fresh green onions for an added punch.

Ingredients

Scale

Main Ingredients

  • 1 lb lean ground beef
  • 1 cup long-grain rice
  • 1 can (15 oz) black beans, rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup bell peppers, chopped
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 2 green onions, chopped
  • 2 cups water
  • Salt and pepper to taste
  • 1 splash of cooking oil

Instructions

  1. Heat skillet: Place a large skillet over medium heat and add a splash of oil to prepare for sautéing the vegetables.
  2. Sauté vegetables: Add chopped onions and bell peppers to the skillet. Cook for about 5 minutes until they are softened and fragrant.
  3. Cook ground beef: Add the lean ground beef to the skillet, breaking it apart as it cooks. Continue until the beef is browned and fully cooked.
  4. Coat rice with spices: Stir in the long-grain rice, cumin, and chili powder to evenly coat the rice with seasoning.
  5. Add beans and tomatoes: Mix in the diced tomatoes (with their juice) and the rinsed black beans, combining all ingredients well.
  6. Simmer rice: Pour in water so that the ingredients are covered by about an inch. Bring the skillet contents to a boil, then reduce the heat to low. Cover and let simmer for approximately 20 minutes or until the rice is tender and cooked through.
  7. Top with cheese and onions: Sprinkle shredded cheese evenly over the skillet. Cover briefly to allow the cheese to melt. Finally, garnish with chopped green onions before serving.

Notes

  • Use lean ground beef to reduce fat content while keeping flavor rich.
  • Make sure to rinse black beans well to reduce sodium and improve taste.
  • If you prefer spicier dishes, add a pinch of cayenne pepper or hot sauce.
  • This recipe can be made vegetarian by substituting ground beef with plant-based meat or additional beans.
  • Cooking time may vary slightly depending on stove and skillet used.
