- 1 lb lean ground beef
- 1 cup long-grain rice
- 1 can (15 oz) black beans, rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 cup bell peppers, chopped
- 2 tsp cumin
- 2 tsp chili powder
- 1 cup shredded cheese (cheddar or Mexican blend)
- 2 green onions, chopped
- 2 cups water
- Salt and pepper to taste
- 1 splash of cooking oil
Instructions
- Heat skillet: Place a large skillet over medium heat and add a splash of oil to prepare for sautéing the vegetables.
- Sauté vegetables: Add chopped onions and bell peppers to the skillet. Cook for about 5 minutes until they are softened and fragrant.
- Cook ground beef: Add the lean ground beef to the skillet, breaking it apart as it cooks. Continue until the beef is browned and fully cooked.
- Coat rice with spices: Stir in the long-grain rice, cumin, and chili powder to evenly coat the rice with seasoning.
- Add beans and tomatoes: Mix in the diced tomatoes (with their juice) and the rinsed black beans, combining all ingredients well.
- Simmer rice: Pour in water so that the ingredients are covered by about an inch. Bring the skillet contents to a boil, then reduce the heat to low. Cover and let simmer for approximately 20 minutes or until the rice is tender and cooked through.
- Top with cheese and onions: Sprinkle shredded cheese evenly over the skillet. Cover briefly to allow the cheese to melt. Finally, garnish with chopped green onions before serving.
