Description

This One-Skillet Kielbasa and Potatoes recipe is a hearty, flavorful dish that combines smoky kielbasa with tender potatoes, sautéed onions, and sweet red bell peppers. Cooked all in one pan, it’s an easy and satisfying meal perfect for busy weeknights or casual dinners.

Ingredients

Scale

Sausage

  • 1 lb kielbasa sausage, sliced into 1/4-inch thick pieces

Vegetables

  • 4 medium potatoes, peeled and diced
  • 1 small onion, chopped
  • 1 red bell pepper, chopped
  • Fresh parsley or chives for garnish (optional)

Seasonings and Oil

  • 2 tablespoons olive oil (or vegetable oil)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Prepare the Potatoes: Heat a large skillet over medium heat and add 1 tablespoon of olive oil.
  2. Cook the Potatoes: Add the diced potatoes to the skillet. Season with salt, pepper, garlic powder, and onion powder. Cook, stirring occasionally, for 10-12 minutes until the potatoes start to soften and become golden brown. Remove from skillet and set aside.
  3. Cook the Kielbasa: In the same skillet, add the remaining 1 tablespoon of olive oil. Add the sliced kielbasa and cook for 4-5 minutes, stirring occasionally, until browned and slightly crispy on the edges.
  4. Sauté Vegetables: Add the chopped onion and red bell pepper to the kielbasa. Sauté for 3-4 minutes until the vegetables are softened.
  5. Combine All Ingredients: Return the cooked potatoes to the skillet and stir everything together. Cook for an additional 2-3 minutes to heat through and blend flavors.
  6. Season and Garnish: Adjust seasoning with additional salt and pepper if needed. Garnish with fresh parsley or chives if desired. Serve hot and enjoy.

Notes

  • You can substitute kielbasa with another smoked sausage if preferred.
  • For extra crispiness, use a cast iron skillet.
  • Adjust seasoning seasonings according to taste.
  • This dish pairs well with a simple green salad or steamed vegetables.
  • Leftovers can be refrigerated for up to 3 days and reheated in a skillet or microwave.
