Ingredients
Scale
Fritters
- 1½ cups flour
- 1 teaspoon baking powder
- generous pinch of salt
- pinch of sugar
- pinch of chilli flakes (optional)
- 1½ cups water
- 4 medium white onions (2 thinly sliced, 2 finely diced)
- 1 cup crumbled feta cheese
- canola oil (for frying, approx. 2 cm depth in pan)
Sweet Chilli Soy Dipping Sauce
- ½ cup sugar
- ½ cup water
- 1 tablespoon soy sauce
- dash of fish sauce
- 1 teaspoon vinegar
- 1 red chilli, thinly sliced
- 1 garlic clove, thinly sliced
- 2 cm piece fresh ginger, thinly sliced
Instructions
- Prepare the onions: Slice 2 medium white onions thinly and chop the remaining 2 into fine dice. Set aside.
- Make the batter: In a mixing bowl, whisk together the flour, baking powder, salt, sugar, and optional chilli flakes. Gradually add 1½ cups water while whisking until you achieve a smooth batter consistency.
- Combine ingredients: Fold the sliced and diced onions and the crumbled feta cheese into the batter, mixing until well distributed.
- Fry the fritters: Heat approximately 2 centimeters of canola oil in a large frying pan over medium heat. Drop tablespoons of the batter into the hot oil and fry each fritter until golden brown and crisp on both sides, about 3-4 minutes per side. Remove fritters and drain on kitchen paper to remove excess oil. Repeat until all batter is cooked.
- Prepare the dipping sauce: In a small saucepan, combine sugar, water, soy sauce, fish sauce, vinegar, sliced red chilli, garlic, and ginger. Bring the mixture to a boil and simmer for 5-10 minutes until the sauce thickens to a maple syrup consistency.
- Serve: Plate the hot onion and feta fritters alongside the sweet chilli soy dipping sauce and enjoy immediately.
Notes
- For a spicier kick, add extra chilli flakes to the batter or increase the amount of fresh chilli in the dipping sauce.
- Use fresh white onions for best flavor and texture.
- Canola oil is recommended for frying due to its high smoke point and neutral flavor.
- Leftover fritters can be kept warm in a low oven for brief periods, but are best enjoyed fresh.
- Ensure the dipping sauce is cooled slightly before serving to prevent burns while dipping.
