  • 1 red bell pepper, thinly sliced

  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped peanuts (for topping)
  • Lime wedges for serving

For the Peanut Sauce

  • 1/3 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon sesame oil
  • 1 teaspoon sriracha or chili garlic sauce (optional)
  • 1/4 cup warm water (to thin)


Instructions

  1. Cook the Noodles: Cook the rice noodles or spaghetti according to package directions until al dente. Drain the noodles and rinse them with cold water to stop the cooking process and prevent sticking. Set aside to cool.
  2. Make the Peanut Sauce: In a small bowl, whisk together creamy peanut butter, soy sauce, rice vinegar, honey or maple syrup, sesame oil, and sriracha (if using). Gradually add warm water while whisking until the sauce reaches a smooth, pourable consistency. Adjust thickness by adding more water if needed.
  3. Combine Ingredients: In a large mixing bowl, add the cooked noodles, shredded or sliced chicken breast, shredded carrots, thinly sliced red bell pepper, chopped green onions, and fresh cilantro.
  4. Toss with Sauce: Pour the peanut sauce over the noodle and chicken mixture. Toss everything thoroughly until all ingredients are evenly coated with the peanut sauce.
