Featuring sautéed onions and green bell peppers with tender roast beef, combined with a blend of cream cheese, sour cream, mozzarella, and provolone, this dip is baked until hot and bubbly for an irresistible crowd-pleaser.

- 1 lb roast beef deli meat, sliced and chopped into ¼ inch pieces
- 1 medium onion, diced
- 1 large green bell pepper, chopped

- 8 ounces cream cheese (1 brick, 250 grams, room temperature)
- ½ cup sour cream
- 1 cup mozzarella cheese, shredded
- 8 slices provolone cheese, chopped into ¼ inch pieces (or substitute 1 cup shredded mozzarella or Swiss cheese)

- ½ tsp black pepper (or to taste)
- Fresh parsley, finely chopped for garnish
- Green onion, sliced for garnish
Instructions
- Preheat the oven: Preheat your oven to 375℉ (190℃). Grease an oven-safe baking dish or skillet lightly with cooking spray to prevent sticking and set it aside for later use.
- Sauté the vegetables: In a large skillet over medium heat, melt 1 tablespoon of butter. Add the diced onion and sauté for 4 to 5 minutes until lightly caramelized. Next, add the chopped green bell pepper and cook for an additional 2 to 3 minutes until the peppers are tender. Stir occasionally to ensure even cooking.
- Prepare the cheese mixture: While the vegetables cook, combine 8 ounces of softened cream cheese, ½ cup sour cream, 1 cup shredded mozzarella, and the chopped provolone cheese in a medium-sized bowl. Stir thoroughly until all the cheeses and cream cheese are well incorporated into a smooth mixture.
- Combine all ingredients: Add the chopped roast beef deli meat, sautéed onions and peppers, ¼ teaspoon salt, and ½ teaspoon black pepper to the cheese mixture. Stir gently and evenly to combine all ingredients. Optionally, reserve 1 tablespoon of the roast beef and cooked vegetables for garnish.
- Assemble in the baking dish: Spread the prepared dip evenly into the greased oven-safe baking dish or skillet. Optionally, sprinkle the reserved beef and vegetables over the top to add texture and visual appeal.
- Bake the dip: Cover the dish loosely with aluminum foil and bake in the preheated oven for 15 to 18 minutes until the dip is hot and bubbly. Then, remove the foil and bake for an additional 2 to 3 minutes to let the top lightly brown and crisp.
- Garnish and serve: Remove the dip from the oven and garnish with finely chopped fresh parsley and sliced green onions. Serve immediately with your choice of sliced baguette, tortilla chips, crackers, or fresh veggies for dipping. Enjoy!
