Ingredients
Scale
Main Ingredients
- 1 cup frozen pineapple chunks
- 1/2 cup canned coconut milk (full-fat for best flavor)
- 1/4 cup pineapple juice
- 2 tablespoons cream of coconut (Coco Lopez is a popular brand)
- 1/4 cup ice cubes (adjust for desired thickness)
- 1/4 cup vanilla ice cream (optional, for extra creaminess)
Optional Additions and Garnishes
- 1 tablespoon white rum (optional, for an adult version)
- Whipped cream, for topping (optional)
- Maraschino cherries, for garnish (optional)
- Pineapple wedge, for garnish (optional)
Instructions
- Combine the ingredients: In a blender, combine the frozen pineapple chunks, coconut milk, pineapple juice, cream of coconut, ice cubes, and vanilla ice cream if using. Add the rum now if making an adult version.
- Blend until smooth: Secure the blender lid and blend on high speed until smooth and creamy, stopping occasionally to scrape down the sides to ensure full incorporation. Adjust thickness by adding more pineapple juice or coconut milk if too thick, or ice cubes if too thin.
- Taste and adjust: Sample the milkshake and adjust sweetness or flavor by adding more cream of coconut for sweetness, pineapple juice for more pineapple flavor, or coconut milk for stronger coconut notes. Blend again after each addition.
- Prepare your glasses: Chill milkshake glasses in the freezer for a few minutes to keep the drink cold when served.
- Pour the milkshake: Pour the milkshake into prepared glasses, filling nearly to the top, leaving room for toppings and garnishes.
- Add toppings (optional): Top with whipped cream, then garnish with a maraschino cherry and/or a pineapple wedge for a classic tropical presentation.
- Serve immediately: Serve the milkshakes right away while they are cold and fresh to enjoy the best flavor and texture.
Notes
- Use full-fat canned coconut milk for the creamiest, richest flavor.
- If a thicker milkshake is preferred, reduce the pineapple juice or add extra ice cubes or frozen pineapple.
- For a non-alcoholic version omit the rum.
- Adjust the sweetness by modifying the amount of cream of coconut based on personal taste.
- Blending in short pulses and scraping the sides ensures even mixing for the smoothest texture.
- Serve with chilled glasses to maintain cold temperature longer.
