Description
This delicious Potato and Green Bean Skillet recipe combines tender baby potatoes, crispy bacon, sautéed onions, and green beans seasoned with everything bagel seasoning. It’s a comforting one-pan meal ready in just 30 minutes, perfect for a hearty side dish or a light meal for four.

Potatoes
- 1 ½ lbs baby potatoes, halved
- 1 teaspoon salt (for boiling water)
Bacon and Vegetables
- 4 oz bacon, chopped
- 1 yellow onion, diced
- 12 oz frozen cut green beans
Seasoning
- 1 teaspoon everything bagel seasoning
- Salt and pepper to taste
Instructions
- Boil Potatoes: Slice the potatoes in half and place them in a large pot. Cover with water and add 1 teaspoon salt. Cover the pot and bring the water to a boil over high heat. Once boiling, reduce the heat to medium-high and allow the potatoes to continue boiling until they are fork-tender, about 7-8 minutes. Drain the potatoes in a colander.
- Cook Bacon: While the potatoes are boiling, cook the bacon in a large skillet over medium heat until brown and crispy. Remove the bacon from the skillet, leaving all the bacon fat or draining off the excess fat but keeping at least 2 tablespoons in the skillet for flavor.
- Sauté Onions: Dice the yellow onion. After removing the bacon, add the diced onion to the skillet and cook over medium heat until the onion is soft and slightly browned, about 5-7 minutes.
- Cook Potatoes in Skillet: Add the drained potatoes to the skillet with the sautéed onions. Stir briefly to coat the potatoes in the bacon fat, then let them cook, stirring only once every few minutes to allow the bottoms to brown nicely, approximately 5-7 minutes.
- Add Green Beans: Add the frozen cut green beans directly to the skillet (no need to thaw). Continue to cook and stir occasionally until the green beans are heated through, about 5 minutes.
- Add Bacon and Seasoning: Chop the cooked bacon if not already chopped and add it back to the skillet along with 1 teaspoon of everything bagel seasoning. Stir to combine thoroughly, then taste and season with salt and pepper or more bagel seasoning as desired. Serve hot.
Notes
- You can substitute fresh green beans if preferred, but adjust cooking times accordingly.
- Leaving bacon fat in the skillet adds great flavor, but you can remove excess fat for a lighter dish.
- Everything bagel seasoning adds a savory, garlicky flavor but can be replaced with garlic powder and sesame seeds if you don’t have it on hand.
- Make sure not to overcook the potatoes when boiling to avoid them becoming mushy during skillet cooking.
