Description

This delicious recipe features roasted sweet potatoes infused with garlic, butter, and Parmesan cheese, delivering a savory and comforting side dish with crispy edges and a tender center. Enhanced with Italian seasoning and fresh thyme, these roasted sweet potatoes make a perfect accompaniment to any meal.

Ingredients

Scale

Sweet Potato Mixture

  • 2 sweet potatoes, peeled and sliced into thin rounds
  • 2 teaspoons minced garlic
  • 1 tablespoon olive oil
  • 2 tablespoons butter, melted
  • 4 tablespoons grated Parmesan cheese
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon fresh cracked pepper
  • 1/2 teaspoon Italian seasoning

For Garnish

  • Fresh thyme, for garnish
  • Additional Parmesan cheese (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 400ºF (200ºC) to ensure it reaches the proper temperature for roasting the sweet potatoes evenly and achieving a nice caramelization.
  2. Prepare the Sweet Potatoes: Peel and slice the sweet potatoes into thin rounds to ensure they cook evenly and become tender during roasting.
  3. Coat the Sweet Potatoes: In a large resealable bag, combine the sliced sweet potatoes with minced garlic, olive oil, melted butter, garlic salt, fresh cracked pepper, grated Parmesan cheese, and Italian seasoning. Seal the bag and shake well to evenly coat all the slices with the flavorful mixture.
  4. Arrange in Baking Dish: Lightly butter a baking dish to prevent sticking. Arrange the coated sweet potato slices in a spiral or single layer pattern to allow even roasting and exposure to heat.
  5. Add Garnish: Sprinkle fresh thyme leaves over the top of the arranged sweet potatoes. You can also add extra grated Parmesan cheese if desired for a richer flavor.
  6. Roast the Sweet Potatoes: Place the baking dish in the preheated oven and roast for 30 to 35 minutes. Check towards the end of the cooking time to avoid burning and ensure the sweet potatoes are tender and golden brown around the edges.
  7. Serve: Remove the roasted sweet potatoes from the oven and transfer to a serving dish. Garnish with additional fresh thyme if you like and serve immediately for the best taste and texture.

Notes

  • Thinly slicing the sweet potatoes ensures even cooking and a tender final texture.
  • You can adjust garlic salt and seasoning to taste depending on your preference.
  • For extra crispiness, arrange the slices in a single layer without overlapping too much.
  • This dish pairs well with grilled meats, roasted chicken, or as part of a vegetarian meal.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven for best texture.
