Instructions

  1. Prepare the mixture: Line a small baking sheet with parchment paper. Place the salmon chunks, almond flour, parsley, salt, pepper, green onions, egg, and lemon zest into a food processor.
  2. Pulse the ingredients: Pulse several times until the salmon and other ingredients are mixed but still chunky—avoid over-processing to prevent turning the mixture into a paste; it should remain chopped in texture.
  3. Form patties and chill: Transfer the mixture to a bowl, mix well, then form into eight even patties. Place the patties on the parchment-lined baking sheet and refrigerate uncovered for 30 minutes to help them set.
