Instructions
- Brown the Sausage: Heat the olive oil in a large skillet over medium heat. Add the sliced sausage and cook for 4–5 minutes until browned. Remove the sausage from the pan and set aside.
- Cook Sweet Potatoes: In the same skillet, add the diced sweet potatoes and 2 tablespoons of water. Cover and cook for about 8–10 minutes, stirring occasionally, until the sweet potatoes start to soften.
- Sauté Vegetables: Add the chopped red onion and red bell pepper to the skillet with the sweet potatoes. Cook for another 4–5 minutes until the vegetables are tender.
- Prepare the Sauce: In a small bowl, whisk together the honey, soy sauce, minced garlic, smoked paprika, and black pepper.
- Combine and Simmer: Return the browned sausage to the skillet and pour the honey garlic sauce over the sausage and vegetables. Stir well to coat everything evenly.
- Finish Cooking: Cook for another 3–4 minutes until the sauce thickens slightly and everything is heated through. Taste and season with salt as needed.
- Garnish and Serve: Garnish with chopped fresh parsley if desired and serve hot.
