Description

A hearty and flavorful Sausage Green Bean and Potato Casserole that combines smoked sausage, tender baby potatoes, and fresh green beans, seasoned with aromatic herbs and spices, then baked to perfection. This one-dish meal is easy to prepare and perfect for a comforting dinner with family or friends.

Ingredients

Scale

Meat

  • 1 pound smoked sausage or kielbasa, sliced into 1/2-inch rounds

Vegetables

  • 1 pound baby red potatoes, quartered
  • 1 pound fresh green beans, trimmed and halved
  • 1 medium onion, sliced
  • 3 cloves garlic, minced

Seasonings & Oils

  • 1/4 cup olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste

Optional

  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it reaches the proper temperature for baking the casserole evenly.
  2. Prepare Ingredients: In a large mixing bowl, combine the sliced smoked sausage, quartered baby red potatoes, trimmed and halved green beans, and sliced onion. Add the minced garlic, olive oil, smoked paprika, dried thyme, dried rosemary, salt, and pepper. Toss everything thoroughly until all ingredients are evenly coated with the seasoning and oil.
  3. Assemble Casserole: Transfer the seasoned mixture into a large baking dish or casserole dish. Spread it out evenly to allow uniform cooking of all ingredients.
  4. Bake Covered: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. This helps the potatoes cook through and allows flavors to meld while preventing drying out.
  5. Bake Uncovered: After 30 minutes, carefully remove the foil, stir the casserole ingredients to redistribute, then bake uncovered for an additional 15-20 minutes. Continue until the potatoes are tender and the sausage has browned nicely.
  6. Optional Cheese Topping: If using shredded cheddar cheese, sprinkle it evenly over the top of the casserole during the last 5 minutes of baking. This allows the cheese to melt and become bubbly and golden.
  7. Serve: Remove the casserole from the oven and let it cool slightly for a few minutes before serving, allowing the flavors to settle and making it easier to serve.

Notes

  • Use smoked sausage or kielbasa for the best flavor, but other sausages can be substituted.
  • Make sure to cut potatoes evenly to ensure they bake uniformly.
  • Covering the casserole during the first part of baking helps steam the potatoes and green beans.
  • Adding cheese is optional but adds a rich, creamy finish to the casserole.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
