Description

This Savory Spinach Quiche is a delicious and wholesome breakfast or brunch option featuring a flaky pie crust filled with a creamy mixture of fresh spinach, onions, garlic, and a blend of mozzarella, cheddar, and Parmesan cheeses. Baked to golden perfection, this quiche offers a rich, cheesy flavor balanced by fresh greens and subtle spices, perfect for a comforting homemade meal.

Ingredients

Scale

Crust

  • 1 (9-inch) pie crust (store-bought or homemade)

Filling

  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 5 ounces fresh spinach, roughly chopped
  • 4 large eggs
  • 1 cup whole milk or half-and-half
  • ½ cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • ¼ cup grated Parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • â…› teaspoon ground nutmeg (optional)

Instructions

  1. Preheat and prepare crust: Preheat your oven to 375°F. If you’re using a store-bought pie crust, place it into a 9-inch pie dish and crimp the edges to prevent shrinkage. Set aside while you prepare the filling.
  2. Sauté vegetables: Heat the olive oil in a skillet over medium heat. Add the diced onion and cook for 3 to 4 minutes until softened and translucent. Add the minced garlic and cook for an additional 30 seconds until fragrant.
  3. Cook spinach: Stir in the chopped spinach and sauté until wilted, about 2 minutes. Remove the skillet from the heat and allow the mixture to cool slightly to prevent scrambling the eggs later.
  4. Mix filling: In a large bowl, whisk together the eggs, milk or half-and-half, salt, black pepper, and ground nutmeg if using. Stir in the shredded mozzarella, cheddar, and grated Parmesan cheeses until combined. Fold in the cooled spinach mixture until evenly mixed.
  5. Assemble and bake: Pour the filling into the prepared pie crust, spreading it evenly. Bake for 35 to 40 minutes, or until the quiche center is fully set and the top is lightly golden brown.
  6. Rest and serve: Remove the quiche from the oven and let it rest for 10 minutes before slicing to allow the filling to set further. Serve warm or at room temperature.

Notes

  • Frozen spinach can be used if fresh spinach is unavailable; be sure to thaw and drain well to avoid excess moisture.
  • For added flavor, consider including cooked bacon, ham, or sautéed mushrooms in the filling.
  • This quiche can be made ahead of time and served either warm or cold.
