Description

Delicious and easy-to-make Shrimp Rolls on buttery toasted brioche buns, featuring tender sautéed shrimp mixed in a creamy, tangy salad with fresh herbs, perfect for a quick lunch or light dinner.

Ingredients

Scale

Shrimp and Seasoning

  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste

Shrimp Salad

  • 1/4 cup mayonnaise
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh dill, chopped (optional)
  • 1 teaspoon celery, finely chopped (optional)

Buns and Garnish

  • 4 brioche buns
  • 1 tablespoon unsalted butter, for toasting the buns
  • Lettuce or arugula (optional, for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Cook the Shrimp: In a medium pan, heat olive oil over medium heat. Add the shrimp and season with garlic powder, salt, and pepper. Cook for 2-3 minutes per side until the shrimp are pink, opaque, and cooked through.
  2. Prepare Shrimp for Salad: Remove the shrimp from heat and let them cool slightly. Once cooled, chop the shrimp into bite-sized pieces.
  3. Make the Shrimp Salad: In a large mixing bowl, combine mayonnaise, lemon juice, Dijon mustard, chopped parsley, and dill if using. Add the chopped shrimp and mix until everything is well coated. For extra crunch, fold in finely chopped celery. Adjust seasoning with salt and pepper to taste.
  4. Toast the Brioche Buns: In a skillet, melt the butter over medium heat. Cut the brioche buns in half and toast them cut side down in the skillet until golden brown and crispy, about 1-2 minutes. Remove from heat.
  5. Assemble the Shrimp Rolls: Place a layer of lettuce or arugula on the bottom half of each toasted brioche bun, if desired. Spoon a generous amount of the shrimp salad onto each bun, then top with the other half of the toasted brioche bun.
  6. Serve: Serve immediately with lemon wedges on the side to add a fresh burst of citrus.

Notes

  • Make sure shrimp are cooked just until opaque to avoid toughness.
  • Fresh dill and celery are optional but add great flavor and texture.
  • Brioche buns add a buttery sweetness complementing the savory shrimp salad.
  • For a low-fat option, substitute mayonnaise with Greek yogurt.
  • Serve immediately after assembling to keep the buns from becoming soggy.
