Instructions
- Combine Ingredients in Slow Cooker: Place the beef cubes, diced onion, minced garlic, grated ginger, curry powder, cumin, coriander, turmeric, and chili powder into the slow cooker. Stir thoroughly to coat the beef evenly with the spices.
- Add Liquids and Potatoes: Pour in the diced tomatoes, coconut milk, tomato paste, brown sugar, lemon juice, salt, and black pepper. Mix well to combine all the ingredients. Add the peeled and cubed potatoes and stir again to distribute evenly.
- Cook the Curry: Cover the slow cooker and set it to cook on low for 8 hours or on high for 4 to 5 hours. Cook until the beef is very tender and the sauce has developed a rich, flavorful taste.
- Add Peas Near End: About 30 minutes before serving, stir in the frozen peas and let them heat through while the curry finishes cooking.
