Description

This comforting Slow Cooker Chicken with Stuffing is an easy, creamy, and flavorful one-pot meal perfect for busy weeknights. Tender chicken breasts are cooked low and slow with a creamy sauce made from cream of chicken soup, sour cream, and chicken broth, all topped with a classic stuffing mix that soaks up delicious flavors. Optional frozen vegetables can be added for a nutritious boost, making this dish hearty and satisfying with minimal effort.

Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Sauce

  • 1 can (10.5 oz) cream of chicken soup
  • 3/4 cup sour cream
  • 1/2 cup low-sodium chicken broth

Stuffing and Vegetables

  • 1 box (6 oz) stuffing mix (such as Stove Top)
  • 2 cups frozen mixed vegetables (optional)

Instructions

  1. Prepare the Slow Cooker: Spray the inside of the slow cooker with nonstick cooking spray to prevent sticking and make cleanup easy.
  2. Season the Chicken: Season the chicken breasts evenly with salt, black pepper, garlic powder, and onion powder, then place them in the bottom of the slow cooker.
  3. Make the Sauce: In a medium bowl, thoroughly mix the cream of chicken soup, sour cream, and low-sodium chicken broth until you achieve a smooth consistency.
  4. Layer the Sauce and Stuffing: Spread the creamy sauce mixture evenly over the seasoned chicken breasts in the slow cooker. Then sprinkle the dry stuffing mix evenly on top of the sauce layer.
  5. Add Vegetables (Optional): If using, add frozen mixed vegetables on top of or around the stuffing layer for added nutrition and color.
  6. Cook: Cover the slow cooker and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is tender and cooked through and the stuffing has absorbed the flavorful liquid.
  7. Finish and Serve: Before serving, fluff the stuffing with a fork to separate it. Serve the chicken and stuffing warm alongside your favorite side dishes.

Notes

  • For extra flavor, use herbed stuffing mix or add a handful of shredded cheese during the last 30 minutes of cooking.
  • This dish pairs well with a fresh side salad or steamed green beans to balance the creamy richness.
  • Using low-sodium chicken broth helps control the overall salt content.
  • If you prefer, you can swap the sour cream for Greek yogurt for a slightly tangier taste and added protein.
