Ingredients
Scale
Chicken and Marinade
- 1½ pounds boneless, skinless chicken thighs
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 2 tablespoons orange juice
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- ½ teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
Tortillas
- 8 small corn tortillas
Toppings
- Diced white onion
- Chopped fresh cilantro
- Lime wedges
- Sliced radishes (optional)
Instructions
- Prepare Marinade and Chicken: In a large bowl or zip-top bag, combine olive oil, lime juice, orange juice, minced garlic, ground cumin, chili powder, smoked paprika, dried oregano, salt, and black pepper. Add the chicken thighs and toss to coat thoroughly. Seal and marinate in the refrigerator for at least 30 minutes and up to 4 hours to let the flavors meld.
- Preheat Grill or Skillet: Heat a grill or skillet to medium-high temperature to ensure a good sear on the chicken.
- Cook Chicken: Remove the chicken from the marinade, allowing excess to drip off. Grill or cook in the skillet for about 5 to 6 minutes per side until the chicken is cooked through, slightly charred, and reaches an internal temperature of 165°F (74°C).
- Rest and Chop Chicken: Let the grilled chicken rest for 5 minutes to retain juices, then chop it into bite-sized pieces suitable for tacos.
- Warm Tortillas: Warm the corn tortillas on the grill or in a dry skillet until they become soft and pliable, perfect for folding.
- Assemble Tacos: Fill each warm tortilla with chopped chicken, then top with diced onion, chopped cilantro, and a squeeze of fresh lime. Optionally, add sliced radishes or a drizzle of salsa verde or hot sauce for extra flavor.
- Serve: Serve these authentic taqueria-style chicken tacos immediately for the best taste and texture.
Notes
- For more intense flavor, marinate the chicken overnight.
- Chicken breasts can be used, but thighs remain juicier and more flavorful.
- Add a drizzle of salsa verde or your favorite hot sauce to enhance the tacos.
