- 1 pound ground beef
- 2 tablespoons taco seasoning
- ¼ cup water (for seasoning)
Beans
- 1 (16-ounce/454g) can refried beans
- ¼ cup water (for beans)
Chips and Cheese
- 1 (13-ounce/368g) bag tortilla chips
- 2 cups shredded cheese (mix of cheddar and Monterey Jack)
Toppings
- ¼ cup pickled jalapenos
- 3 roma tomatoes, diced
- ½ cup diced red onion
- 1 avocado, diced
- â…“ cup sour cream
- ¼ cup roughly chopped fresh cilantro leaves
Instructions
- Cook the Ground Beef: In a large skillet over medium heat, cook the ground beef until browned and crumbled, about 5-7 minutes. Drain any excess fat to keep the dish from becoming greasy.
- Season the Beef: Add the taco seasoning and ¼ cup water to the cooked beef. Stir well to combine and cook for an additional 2-3 minutes to infuse the flavors.
- Heat the Refried Beans: In a small saucepan, combine the refried beans with ¼ cup water. Heat over low-medium heat, stirring occasionally, until smooth and warmed through, about 5 minutes.
- Preheat the Oven: Set your oven to 400°F (200°C) to prepare for baking the nachos.
- Assemble the Nachos: Spread the tortilla chips evenly on a large baking sheet. Layer the seasoned ground beef, warmed refried beans, and shredded cheese evenly over the chips.
- Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes until the cheese is fully melted and bubbly.
- Add Pickled Jalapenos: Remove the nachos from the oven and sprinkle the pickled jalapenos on top while still hot.
- Add Fresh Toppings: Finish by topping with diced roma tomatoes, red onion, avocado, sour cream dollops, and chopped cilantro for fresh flavor and texture.
- Serve and Enjoy: Serve immediately while the cheese is warm and gooey for the ultimate nacho experience.
Notes
- You can substitute ground chicken or turkey for a lighter protein option.
- For extra heat, add jalapeno slices before baking as well as after baking.
- Use gluten-free tortilla chips if gluten sensitivity is a concern.
- Leftover nachos can be stored but are best enjoyed fresh to maintain crispiness.
- Feel free to add other toppings like black olives, corn, or green onions to customize the nachos.
